Keto dessert: Double Chocolate Chip Cookies

Happy Wednesday everyone! I’m back today with another recipe! Because, this is why you sought out this blog, right?? This one is for all of you that are living that low-carb and/or sugar-free lifestyle. This recipe is delectable, filling, and GUILT-FREE!

After completing my 36 hour fast (check it out here!), I rolled right into a keto diet. I’ve had varying levels of success (and failures, if I’m being honest) with the keto lifestyle over the past few years. There have been times where I’ve done it and I felt amazing, I lost a healthy amount of weight, and it didn’t feel like a chore. But there have been other times in my life where I tried to jump in and it felt like everything I did was counterproductive. I felt fatigued, sick, and gained a bunch of unnecessary weight. This was mostly because I was trying to have my cake and eat it too. The important thing to know is this: as I was NOT fat adapted yet, I should have kept my carbs under 30 g per day! 🙅‍♀️

However, after a 36 hour fast, I don’t feel the crushing weight of sugar cravings, and I’m no longer interested in that side of potatoes with my roast beef.

ANYWAYS, my mom and dad came by the other day and stayed for supper. To cut me a break, my amazing mom brought her delicious Shepherd’s Pie (I had mine with whipped cauliflower instead of potatoes), AND a big container of her delicious milk-chocolate chip cookies. They smelled SO good. But I couldn’t indulge because they’re a double whammy for me: carbs and sugar. So my husband had my serving of cookies as well as his.

This got me thinking. Fun-fact: I’ve never been all that great at baking (because I’ve never really enjoyed it) – though I’ve been getting my feet wet lately with this blog (and coming to appreciate it). And it sure would be nice to have a keto-friendly cookie dessert around here as well. So I thought I would try my hand at making some chocolate chip cookies. SO I found a run of the mill chocolate chip cookie recipe in one of my cookbooks, and decided to modify it to fit my lifestyle, and THUS these death by chocolate chip cookies were born. And boy was I not disappointed. Interested in how I did it? Then, let’s hop to it!

Ingredients & Tools

You need the following:

  • One to two eggs (I used one egg but I’ll be using two next time)
  • Almond Flour
  • Coconut Flour
  • Baking Soda
  • Cream of Tartar
  • Stevia
  • Dark Chocolate Liquid Stevia
  • Cacao Powder (again, not the same thing as Cocoa powder)
  • Cacao nibs
  • Vanilla Extract
  • Butter
  • Medium Bowl
  • Whisk
  • Measuring cups & spoons
  • Wooden Spoon
  • Cookie Sheet
  • Coconut oil

Directions:

First off, get your oven preheating to 350°. While your oven is heating up, put 3/4 cup of softened butter in a bowl with your egg(s). Then, add 1/2 cup of powdered Stevia, and 20 drops of dark chocolate liquid stevia. Whisk this up. Next, add 1/2 cup of the Cacao powder, and mix that in.

Next, add 1 Cup of Almond Flour and 1/4 cup of Coconut Flour. I originally just had the Almond Flour but the batter tasted a bit nutty and it needed something to absorb some more of the liquid. The coconut flour perfectly balanced the taste and the batter tasted more like regular cookies, and it was much more pliable this way.

Before you start mixing again, add 1 teaspoon of Cream of Tartar, 1/2 teaspoon of baking soda, 1 teaspoon of vanilla. Get your wooden spoon out and mix everything with the spoon. It won’t take long and you don’t want to overmix this.

Finally, pour in 1/2 cup of Cacao bibs and fold them in.

Grease up your cookie sheet with some coconut oil. I like using the liquid coconut oil, pouring a little on, and rubbing it over the bottom and sides of my cookie sheet (then I rub it into my hands).

Mind the nails, folks – it’s not a pretty sight!

Finally, take your cookie batter and roll it into balls. I went with balls that were about the size of golf balls. But you make them as big or small as you like. Don’t worry about them spreading much, so you can get away with placing them a bit closer together.

Place the cookie sheet in the oven and bake the cookies for 10-12 minutes. Be careful not to burn yourself like I did when you pull it out of the oven. Remove from the oven and let them sit on the cookie sheet for a few minutes to cool.

Ouch!

Take a cookie and enjoy with a cup of Whole milk or coffee with cream. I enjoyed with a cup of coffee with cream. Yum!

    Looks yummy. I’ve never really enjoyed baking either. It’s what got me into cooking, but now I just find it messy. I’ve never had keto cookies I don’t think, but I do like that these are full of chocolate. Good luck with your keto diet.

    I tried keto banana oatmeal cookies. Squished bananas with oatmeal and I added cinnamon. Very easy and quite good. I haven’t made many desserts that are low carb or low sugar. I never really ate much dessert- lucky for me. I eat apples or raisins to curb my sweet tooth. 🙂

        Eek! I don’t have real aloe! I did put some aloe Vera gel though…and then my burn blister popped and it’s surprisingly feeling much better!
