#FeelGoodFriday: French Onion Soup

It’s another #Feelgoodfriday, folks! I love these days. I get super hyped up when preparing to write my post for Fridays. There’s just something so fun about it, you know? Of course you do, because it’s Fri-yay. Hah.

My husband has been feeling a little under the weather the past couple of days and you know what always makes him feel better? Soup! I know he isn’t the only one who feels better with soup. So for today’s #Feelgoodfriday, I wanted to present to you my French Onion Soup recipe (with wine!) that I did up in my Instant Pot. And it was DELICIOUS! Interested? Keep reading!

Ingredients:

  • 6 medium Yellow Onions
  • 2 TB Olive Oil
  • 1/3 cup Braggs Liquid Seasoning
  • 1/4 cup Worcestershire sauce
  • 8 cups of beef broth
  • 1 Beef Bouillon
  • 1/2 cup red or rose wine
  • 1 tsp garlic powder
  • 1/4 tsp sage
  • 1/4 tsp thyme
  • 1/4 tsp rosemary

Directions:

First, set your Instant Pot to saute. Keep the lid off for this part. Pour the two tablespoons of olive oil in the bottom of the pot. Cut all your onions into round slices or half-moon slices. Caramelize your onions in the olive oil.

Once your onions are caramelized, pour your beef broth into the Instant Pot. Next, pour in your Braggs Liquid Seasoning, Worcestershire sauce, beef bouillon package, wine, and seasonings. Stir all this, take a little taste and close the lid on your Instant Pot.

Next, set your Instant Pot to the “Soup/Broth” function, and ensure the valve on the lid is set to “Seal” and not in the “Vent” position. I set my Instant Pot like for for two hours (because, procrastination), but you can set it for as long as you want. Remember, soup tastes better the longer it simmers with all the flavours!

Once your Instant Pot beeps at you, I would recommend not turning your valve to “Vent” quite yet. While you wait for it to de-pressurize, toast up some bread or baguette (whichever you have and/or want).

I toasted some Sprouted Grain bread in this fancy toaster of ours. 10 points to whomever can guess whose face this is that gets burned into our toast!

Anyways, while I wait for my toast, I mix up some butter, minced garlic and italian seasoning. I will be lightly buttering the toast with this before I place it on the soup as the crouton topping.

Once you hear the little red post fall back into the Instant Pot lid, signalling that it’s ready, open the lid and ladle some soup into an oven-safe bowl. Set your oven to broil.

Place your garlic toast squares on the top of the soup, and top with your preferred cheese. I ONLY had goat cheese curds in the fridge, so this is what I used for mine. I found I was pleasantly surprised by how much I enjoyed the flavour with the goat cheese.

Place your soup under the broiler for a few minutes until your cheese begins to brown. Take the soup out, try not to burn your hands, and enjoy!

This was something my husband and I both felt SO good about!
